Skillet Breakfast

At an earlier camping trip this summer, we cooked a Jimmy Dean Skillet Breakfast one morning. If you haven't had one of these, they come in the frozen food section of the grocery store and are available in different varieties. The base for all of them are potatoes and veggies. Then you can get ones with either ham or sausage added. The cooking directions are to fry the package contents for about seven minutes and then push it to one side and cook some scrambled eggs on the other side. They are pretty tasty and easy to prepare.

As I get ready for a camping trip starting tomorrow, I decided to make my own skillet packages. I used fully cooked pork sausage patties and frozen hash browns I bought at Wal-Mart. I microwaved both for about a minute and then diced them. I added chopped onion and red and green pepper. I put all in a ziploc bag and in the freezer to bring to camp. I will bring EggBeaters to add to the cooked mixture I made.

What I made could obviously be made to one's own liking. It is a lot cheaper to make this yourself than buy the Jimmy Dean packets.

We have also tried them and liked them. Super easy but your right- a little on the expensive side. Sometimes we roll it up in tortillas for a breakfast burrito.

Thanks for posting that tip.  Was wondering why this section of the forum wasn't loaded with recipes, etc.

I've been cheating and using canned diced pototoes, frying them up and doing something similiar to what you've posted.
