Mexican Sweet Corn Stuff

We just call it Corn stuff, but its the Mexican Sweet Corn stuff you get at CHevy's.  Its good and easy to make.  We doubled the recipe for the DO.  
You can not steal this for the SCCampers Potlucks though, looks like this will be my Goto for a While.

1 (one) CUP SOUR CREAM
1 (one) 7 OUNCE BOX OF JIFFY CORN MUFFIN MIX
2 EGGS
2-3 TABLESPOONS SUGAR

I love the sweet corn side dish and make it quite often at home.    I never thought of trying it in the DO.  

I will have to try the onion one too.  I receive all the Taste of Home cooking magazines and love them.  Thank you

glad it worked for you!  My wife has tried non fat lo fat sour cream margarine butter, and that recipe works the best.  Its great for pot lucks etc, easy to make. :-()  :morning:
