 CamperrooSausage, cheese and scrambled eggs with salsa wrapped up in a browned tortilla.  Coffee.  Lots of coffee.

 CamperrooHere s what the kids go nuts over.....
 
 Brown Jimmy Dean HOT sausage (the ground stuff that comes in a big tube) and drain fat.  Scramble 12 eggs.  A few minutes before the eggs are done add the ground sausage and 4 or five slices of Kraft cheese.  Stir it all up and you have a quick and zippy breakfast.  Even the kids that don t like spicy food go wild over this.  Feeds 4 kids and 2 adults.

 CamperrooPoor old stomach just can t handle bacon and eggs any more.  Sure do love flavored oatmeal, toast and fresh coffee[;)]!  Good stuff and I don t " pay"  for it for the next 2 hours like I do with bacon[&:][:@][: (].

 CamperrooAfter I ve drank my first pot of coffee..
 
 We love to have the night befores leftover steak and potatos. I have even been known to make extra  just so we have it for breakfast. Slice it all up, add onions and mushrooms and fry till the potatos are browned and a little kirspy. If I m really hungry
 a fried egg or 2 on the side.

 Yum ....Yum. I m glad that you added the onions and mushrooms. DW wouldn t have it any other way.
 
 Course, you can add the fried eggs but only if you are having grits to mix with them. And YESSSSSSS cooooooffffffeeeeeee. We grind the beans for coffee the night before so that it s aroma will be the alarm clock for the next morning. Ain t those automatic coffee makers great.....  
 
 To finish out the spread, you have to add sausage dripins milk gravy over butter milk biscuits. (Aaaaah -- that s why I bought that Coleman Oven.)
 
 Now I ve got to go down and fix dinner so that my lovely wife will be able to eat when she gets home.

 Turn KeyHow do you make potato pancakes??!!  I loves potatoes, usually cut them up to make homefries...but the potato pancakes sound way too good!  And the scrambled eggs with bacon/sausage wrapped up in tortilla rolls...that s on my list now too!

 My favorite camping breakfast (...and I m kind of " famous"  for it).  Is my own invention of Western Omelets, wheat toast, and orange or apple juice.
 
 I love to cook omelets at home and have discovered I m not half bad at it when camping either.  I make them with eggs, Pepper jack cheese (preferrable freshly grated), and a zesty brand of salsa.  
 
 They are my favorite and are delicious when cooked over the campfire.
 
 If I don t have time to cook, or need a quick breakfast, then I usually go for a blueberry, some cornflakes with non-fat milk, and apple or orange juice.

 You can make potato pancakes with mashed potatoes mixed with an egg and then dredged in a flour, salt and pepper mix.  Fried on a medium heat until brown on each side, turning only once.  
 
 Or you can make them with fresh grated potatoes mixed with egg, flour and a little milk.  You can bread it like the mashed potatoes above or fry it just as it comes out of the bowl.

 ForestCreatureWe call this " All-purpose Pig-out Camping Meal."  --good for bkfst, lunch or dinner:  Fry some bacon and set it aside.  Use bacon grease to fry sliced potatoes, onion and green pepper.  Meanwhile, shred some cheese and crumble the bacon.  Use a fork to lightly scramble some eggs in a bowl, along with a splash of water.  When the potatoes are nearly done, increase the heat and add the eggs.  Lift the potato mixture with a spatula to let the eggs flow underneath. Add seasoned salt and pepper.  Keep turning everything over until eggs are done.  Sprinkle the shredded cheese and crumbled bacon on top.  Serve with salsa and beer.  The BEST!!

 ForestCreatureWell since my cardiologist said no more I guess I m giving up my search for the ultimate frying pan like My ex FIL has. 36 inches.
 When the extended family got together to camp it cooked bacon and sausage for at least 20, then came the " deep fried"  eggs and home fries. Amazingly there wasn t any grease left in the pan after cooking. Gee I wonder why my doctor gasps when I told him about those breakfasts?[:D]
