RE: what s your favorite camping breakfast?

 ForestCreatureMountain Man breakfast, or Armadillo Eggs reheated over the fire.  I just finished cooking up the  dillo eggs for this next campout, can t wait to have them around the fire with some ice cold orange juice and lots of green tabasco sauce.  YUMMY!
 
 PS - these armadillo eggs are not cheese stuffed jalapenos.

 CamperrooWe seldom have a large breakfast when camping because we leave to hike early in the morning and there is not time to make a large breakfast and clean up afterwards but when we do I make a potato-bacon hash that when almost done I put eggs on top of and cook with the lid on tight.
 I have cut the bacon into 1/3 inch pieces at home and fried them until almost done.  I then drain, but not completely and put into peanut butter jars.  (The lid fits tightly and won t come off).  I freeze the jar until we are ready to go camping.  It will stay in the refrigerator until I am ready to use it.

Then bacon and eggs cooked to order. Or the World Famous Wahoonc French Toast. On the last group campout that was 3 loaves of Texas Toast and 2 dozen eggs and a gallon of syrup. Feeding of the 5000?

 ForestCreatureSomebody else called them Breakfast Tacos, but we call them Breakfast burritos.  Take tortilla shells and spread sour cream and salsa on them, add bacon, scrambled eggs, cooked carmelized onions, mexican cheese and roll them up and cook them in a pan.  Yummmmmmmm.

 ForestCreatureWe make an oatmeal mix (slightly adapted from one of the Make-a-mix cookbooks).  Quick cooking oatmeal (not instant), brown sugar, cinnamon, nutmeg and dried fruit (if we have them, apples we ve dried, also like the Marianni berries & cherries-when we can buy it at a reasonable price; last year we dried our own cherries, have enough for one big batch of mix).  Cooks quickly, is tastier than plain oatmeal, the non-stick cookpot we have cleans up well.  If we ll be out longer than our mix lasts (it does take up quite a bit of room), we mix up the sugar, spices & fruit for the size of canister usually available in stores, carry it in the 2 gallon ziplock, then just buy oatmeal when we need it.  I ve also made a mix tht used dried mincemeat, it was OK for a change but not DH s favorite.
 Sometimes we have some of our muffin left over from the night before (we make one big muffin as dessert), so that is an add-on.
 We do french toast if we need to use up bread and eggs, and want to take the time. When we camped with friends, we ended up making pancakes and sausage, but that is not usual, we like to have something fairly quick and get out hiking, or on the road.
 For quick get-aways, or if we re tenting and it is too windy/cold, hot chocolate and a granola bar.

 Cut up some potatoes
 Scramble some eggs
 Cut up some onions
 Heat up some Crisco
 Make holes in can bisquits
 Fry bisquits in Crisco - Makes Doughnuts
 Fry potatoes and onions in Bacon Grease - Makes great hashbrowns
 Cook eggs after hashbrowns are done.
 Serve with ice cold Orange Juice and Piping hot coffee.
 
 You get lots of real good grub.  Makes the folks that have cold cereal seem pointless.  Why bother?

 CamperrooWe make it as easy as possible since this is relaxation time for us.  We like bacon and eggs, and sometimes have pancakes (the shake and pour kind).  For toast we a have a thing that sets on top of a burner and has arms that props the bread up for toasting and after flipping it once the toast is ready for buttering.   Coffee for Joe and diet Coke for Kathryn.  Kids get juice.  
 
 We use paper plates and plastic tinsels, which enable to have more time to do fun stuff while camping.  The outside shower is helpful in rinsing pans, tinsels, etc., that we do wash.
 
 How many of you folks use a griddle by the way?  We think that it might make the job easier and so it on our list of accessories to get for our popup camper.  Any recommendations?

 ForestCreaturewe use a griddle, don t know what kind it is, picked it up at a local sporting goods store.  One side is smooth the other has ridges for doing bacon, etc.   Works great!

 If and when I get ambitous enough, eggs and bacon do nicely. On Sundays, we take all our left-over meats, about 5 potatoes, half an onion, and chop them up. Put them on tin foil, cover with butter and cheese slices. Wrap them up and put them on the tripod. Excellent way to get rid of left-overs. We ve even had neighboring campers come over for brunch![8D]

 ForestCreatureMy DS loves to make the shake & pour pancakes and the bacon while I fry up some frozen hash browns in a little of the bacon grease.  I also love french toast made from raisin bread.  Don t do coffee...diet coke for me.
 
 I ve convinced myself that calories don t camp when camping.[:D]

 CamperrooCamper s Scramble or Camper in a Hole with Coffee and OJ
 
 Camper s Scramble
   - cook sausage meat
   - add hashbrowns and cook for a few minutes
   - add green peppers, corn, onion ect
    - add eggs and scramble
   - add shredded cheese
 
 Yum!  [:)]
 
 Camper in a Hole
 - butter both sides of a piece of bread
 - cut or tear out a hole in the middle of the bread
 - place bread in hot frying pan
 - crack egg into hole in bread
 - flip to cook both side of bread and egg

 Campfire Breakfasts are the best.  We like traditional Sausage/Bacon/Biscuits/Sausage Gravy/OJ and Fried Eggs!!!  Fatty but YumYum!!!!

 That Texas Toast is what makes them good. This is that thick sliced bread about the size/thicknest of 3 regular pieces of bread.
 
 I usually get up and start coffee brewing, then as the kids start to get up, fry bacon or sausage, and make toast. Then we fry or scramble eggs. Have been making gravy the last few trips.  
 I do love that Chipped beef gravy that Dee talked about but haven t made any on a camping trip yet.. Something my dad used to make every Saturday morning like clockwork, this was his thing, get up and make chipped beef gravy(SOS)(if you want ot know what this means email me.), eggs and toast. Then he would wake us up a just about time everthing was ready.. He even did this after i married and moved away. He would call and get me up and say, "  be here in 10 minutes if you want it hot."  I miss those days..[:(]
 But I cook when camping and kids love it as does the wife...
