I'm going to throw this idea at ya guys, it worked well in Newport.

I'll do breakfast burritos for Sunday morning while you guys pack up and Sat maybe you guys can do let's say pancakes and one bring sausage and one bacon??  or any other breakfast thing will do.
Dinner Sat how about we BBq- BYO meat, and a dish to share.

I was getting worried I wouldn't get to camp before June. The month of May is pretty much out for us.

Dee, I like your ideas for meal-planning. We usually skip breakfast Sunday morning so we can pack up, but breakfast burritos is excellent!! Thanks!!!
 
Since I usually make pancakes Saturday morning anyway--it's Griffin's favorite food--I'll take care of that. :)  As for Saturday evening dinner, I'll make dessert if you guys want to tackle side dishes...maybe a fruit cobbler  with some ice-cream?  Hey Dee, you got a freezer in that newfangled RV of yours? ;)  Now to figure out what we want to BBQ....
 
Just for everyone's 411, my mom will be with us too.  I'm ready to have her back out and camping with us.

Woohoo!  LOVE the menu suggestions (and we LIVE for your breakfast burritos Dee).  Lori, since you said you'd do the pancakes, we'll take care of the sausage and bacon for Sat. AM.  We'll bring a pasta salad and something "potatoey" for dinner on Sat. night.  (p.s.We LOVE cobbler in this house)
 
Since we had to cancel Silent Valley, we are itching to get out!!!  We might have our a/c installed on the p.u. by then so we can test it out before this summer's road trip!

Just had a thought...I couldalso make Paula's DO mashed potatoes. They're pretty incredible. Dee, you might remember them from the Casitas 2002 rally--when all of this madness got started. :D
 
Edit:  D&K--didn't see your post before I posted this one.  I'm fine with you doing something potatoey.  I wasn't trying to steal your thunder.  Also, have you tried that pre-cooked bacon and sausage?  I use the Tyson pre-cooked bacon, and I give it just a real quick go in a hot skillet to crisp it up a bit before serving.  It's super easy and creates hardly any fat to deal with when you're camping.  Just a thought for whatever it's worth:)

yes I love my freezer...I can pass up all sweet except Ice cream!! :D

oh I hate potato's   NOT!! my down falls, potatos, meat, cheese ,Ice cream, chesse ,beer, meat, beer, and um ... cheese..the reason I'm so fat!!
this is going to be sooo fun...

Are you kidding? The less work I can do camping, the better. I've tried with success, the precooked sausage, but not the bacon - you can bet we'll bring that too!

DO mashed potatoes? Dan'll have an excuse to finally go buy one! Maybe we'll even give that a whirl!

Beer?  Did you say beer?  I've been way good lately laying off beer and spuds, but, come April 15....let the feasting begin!!!

never thought of that, I always cook the sausage and potatoes for the burritos at home. I too like to cook less at the campground..I love my microwave :p

How do you like the Honda 2000EUi? That's the one my DH has been drooling over. At this point, it's what I call an "inevitablity". He'll probably buy one by the start of summer.
We have the EU1000 and really like it.  It is so  small, it fits almost anywhere.  I think it probably weighs about 30 lbs or less.  It runs the portable DVD player just fine.  When we bring it, it fits in the Yakima basket on the roof so we don't have anymore "gas":D  in the car than necessary.  My parents bought ours as a Christmas present 2 years ago and I think it was $645.  That price included shipping.
